Fransk kalops
Fransk kalops. Kalops ar en kar gammal grytklassiker och att den gors i olika versioner visste vi redan, den skanska med morotter, men att det finns en fanns variant hade vi ingen aaaning om. Inte forran Hakan botaniserade i en av alla de gamla kokbockerna vi fyller var bokhylla med, gjordes denna franska upptackt.

Putsa kottet och skar det i 3x3 cm stora bitar. Skala och skar morotter och lok i ca 3 cm stora bitar. Bryn kottet i smor och olja i en gryta. Tillsatt morotter, lok, lagerblad och kryddpeppar. Lat frasa nagra minuter under omrorning. Hall pa vatten och kalvfond over allt kott och gronsaker i grytan. Koka upp och skumma av.

Skansk Kalops (Swedish Beef Stew) This is my version of Skansk kalops which is a very simple, traditional Swedish Beef Stew with Onions, Allspice and Carrots. I have used Beef short ribs in my stew as I love the gelatinous texture you get and super tender beef when it is slow cooked.

Season the beef with salt and white pepper and brown for about 4 minutes in the hot fat. When coloured all over, sprinkle with the flour and cook, stirring the meat around until the pan becomes dry. Add the vinegar and 2 tablespoons water and use these to deglaze the pan, scraping up any bits stuck to the bottom.

It has remained a well-known and well-loved dish in Sweden for nearly years. Kalops is a traditional Swedish beef stew that is slowly cooked with vegetables and spices, most notably allspice berries which gives it its distinct flavor. Traditionally it is always served with potatoes and red pickled beets.
